Chef de Cuisine, Motonobu Nishimura

Over his 15 year career, Chef Motonobu Nishimura has always appreciated French cooking with high quality ingredients. After receiving his diploma from Taiwa Culinary School in Kyoto, Chef Moto went to train in kitchens across the South of France. He worked as a Sous Chef at the Michelin-starred Les Bacchaneles for several years, and then returned to Japan to work at Michel Bras, a three Michelin-starred French restaurant.

Upon arriving in Toronto, Chef Moto held the position of Sous Chef at Daisuke Izutsu’s Kaiseki Sakura, where he catered to the Consulate General of Japan. He then moved on to a brief stint at Bite Me!, owned by Chef Marc Thuet.

Chef Moto spent the last several years working as Senior Sous Chef under former Executive Chef Marc St. Jacques at Auberge du Pommier. He played a vital role beside Chef Marc in winning top honours at the Canadian Culinary Championships in 2013. With his most recent appointment as Chef de Cuisine at Auberge du Pommier, Chef Moto brings his unique vision and depth of knowledge of modern French cuisine to the kitchen.
